Brown Butter Chocolate Chip Cookies

Crisp edges, soft centers, and the kind of warmth that lingers long after the oven cools.

Some recipes are meant for celebrations. Others quietly arrive on ordinary afternoons, asking nothing more than a little patience and a warm oven.

These are the cookies I reach for when the house feels still. When the rain taps against the windows, when a favorite playlist hums softly in the background, or when I need something simple that reminds me home can be a feeling we create for ourselves.

Brown butter has a way of slowing you down. It asks you to stay close to the stove for a few extra minutes, watching pale butter transform into liquid gold. The kitchen fills with the scent of toasted caramel, roasted hazelnuts, and something almost nostalgic. It’s a small reminder that beautiful things often begin with paying attention.

That extra step changes everything.

The cookies bake with crisp, buttery edges that give way to soft, almost cloud-like centers. Pockets of melted chocolate stretch with every bite, and a sprinkle of flaky sea salt turns the sweetness into something balanced and comforting. They aren’t extravagant. They simply feel intentional.

I think that’s why I love them so much.

In a world that encourages us to rush through everything, baking cookies from scratch feels quietly rebellious. Measuring flour. Waiting for butter to brown. Chilling the dough instead of skipping ahead. None of it is difficult, but every step invites you to slow down.

And sometimes that’s exactly what we need.

Maybe you’ll share these with people you love. Maybe you’ll leave a plate on the counter for family to discover. Or maybe you’ll keep a small container tucked away just for yourself, enjoying one with your afternoon coffee while reading a few chapters of the book that’s been waiting patiently on your nightstand.

Both choices are equally beautiful.

Brown Butter Chocolate Chip Cookies

Prep Time 1 hour 20 minutes
Cook Time 12 minutes
Total Time 1 hour 32 minutes
Course Dessert
Servings 24 cookies

Ingredients

  • 1 cup 2 sticks unsalted butter
  • 2½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon fine sea salt
  • 1 cup packed light brown sugar
  • ½ cup granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 teaspoons vanilla extract
  • 1½ cups semi-sweet chocolate chips
  • ½ cup chopped dark chocolate optional, for extra melty pockets
  • Flaky sea salt for finishing

Instructions

  • Place the butter in a light-colored saucepan over medium heat. Stir frequently as it melts, foams, and begins to brown. Once golden brown bits appear on the bottom and the butter smells rich and nutty, remove it from the heat immediately. Pour it into a heatproof bowl and let cool for about 20 minutes.
  • In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
  • In a large bowl, combine the cooled brown butter with both sugars until smooth.
  • Whisk in the egg, egg yolk, and vanilla until glossy and fully incorporated.
  • Gently fold the dry ingredients into the wet ingredients until just combined. Be careful not to overmix.
  • Fold in the chocolate chips and chopped chocolate.
  • Cover and chill the dough for at least one hour. Overnight is even better if you have the time.
  • Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  • Scoop about two tablespoons of dough per cookie, spacing them about two inches apart.
  • Bake for 10 to 12 minutes, until the edges are golden while the centers still appear slightly underbaked.
  • Sprinkle with flaky sea salt as soon as they come out of the oven. Let them rest on the baking sheet for five minutes before transferring to a wire rack.

Notes

The waiting is part of the recipe.
While the brown butter cools or the dough chills, resist the urge to fill every quiet moment. Put the kettle on. Water your plants. Fold the blanket that’s been draped across the sofa all week. Read a few pages of a novel. Open a window if the weather allows.
The cookies will still be there when you’re done, and somehow they’ll taste even better knowing you allowed yourself to slow down with them.
These cookies are at their very best while still slightly warm, when the chocolate is soft enough to melt onto your fingertips. Pair one with a cold glass of milk, a homemade latte, or an afternoon cup of tea. They also freeze beautifully, so future-you can have a little comfort waiting on an ordinary day.
